I feel like this concept has been trending for quit some time and not loosing any steam. Time to jump on the band wagon with this vanilla chia pudding. Simple to make and less than half the time to set (compared to the conventional recipes). Let’s get to the recipe!
Trendy recipes can be healthy and delicious – like the ever so popular chia pudding
It took me a little while to get behind this popular recipe. Not because it was hard to make or lacked health benefits, but because of the interesting texture. You know, the swollen chia texture. A little gelatines – some might say slimy. Don’t worry, I have discovered a way to keep the concept of the chia pudding but cut down on the typical chia texture. Trust me. You’ll get more creaminess and less gelatine-ish.
- 1 cup high fat yogurt
- 4 tbsp almond milk
- 2 tsp vanilla extract
- 2 Tbsp maple syrup
- 1/4 cup chia seeds
- 1/2 – 1 Tbsp collagen powder
- In a bowl whisk together the yogurt, milk, vanilla and maple syrup.
- Add the chia seeds and whisk to combine.
- Place in the fridge for a couple hours to let the chia seeds do their thing.
- Top with your favourite berries and enjoy.
Take this basic vanilla recipe and transform it with cocoa powder, matcha, peanut butter, or even raspberry jam to enjoy a week of chai puddings.
