Tangy Lemon Tart Snack Bites

I love a good tang or pucker as some people call it. You know, when your eyes squint and your lips pierce because something is so yummy and slightly sour. That face you make when you bite into a really good lemon tart or drink homemade lemonade. That was the inspiration behind these lemon snack bites. I wanted to be able to experience the joy of eating a delicious lemon tart … at any time the day.

We should love the food we eat and how it makes us feel.

For me, these lemony bites do just that. They make me and my taste buds smile 🙂 That might sound cheesy but it’s truly how I feel.

Everyone should experience love for the food they eat and really connect to how makes them feel. We deserve to feel vibrant and eat delicious food everyday. Am I right?!

Tangy Lemon Tart Snack Bites

  • 1/3 cup honey
  • 1/2 cup cashew butter
  • juice and zest of 1 lemon
  • 2 cups rolled oats
  • 1 Tbsp chia seeds
  • 1/2 cup almond meal
  • 1/4 cup hep hearts
  1. In a large bowl mix together the honey, cashew butter, and lemon juice until well combined.
  2. Add in the remaining ingredients and mix until well combined and a slightly sticky dough forms.
  3. Roll into 1 inch balls and store in an airtight container in the fridge.
  4. Enjoy any time.
