Healthy Lemon Overnight Oats

Breakfast is the most important meal of the day. I bet you’ve heard that line a million times before. Well,  listen up because it’s true. Eating in the morning helps boost your metabolism and prepares your body for the day. A healthy breakfast provides energy and helps balance your blood sugar so you can be the bad ass lady boss that you are. Healthy doesn’t have to mean boring and flavourless. In fact, I believe it should be the exact opposite. Healthy food should be colourful, exciting, delicious, and satisfying.

Let’s give healthy a good name and jump on the breakfast band wagon with these easy lemon overnight oats. The perfect grab and go breakfast for us busy boss ladies and those that just like a few extra minutes of beauty sleep, I’m right there with ya sister.

Breakfast has never been easier or more delicious

 

Take 2 minutes before you go to bed to toss all the ingredients into a mason jar, give it a shake, and send to the fridge for a chilly nap.

Wake up refreshed from your extra 20 minutes of sleep (because you don’t have to make breakfast) and grab your lemony oats from the fridge. Enjoy straight away or grab a spoon and take them on your commute. If you choose the second option be prepared to share the recipe with everyone around you. Its like eating a lemon tart or square for breakfast …. but healthy.

Easy Breakfast: Lemon Overnight Oats

Serves: 1
Easy and delicious lemon pie overnight oats
Ingredients
  • 1/2 cup rolled oats
  • 1 Tbsp ground chia
  • 1/2 cup coconut yogurt
  • 1/2 cup almond milk
  • 2-3 Tbsp maple syrup (depending on sweet preference)
  • 2 1/2 Tbsp lemon juice
  • zest of one lemon
Instructions
  1. Add everything to a mason jar. Screw on the lid and shake.
  2. Place in the fridge overnight and enjoy in the morning.
