Fall always means back to school, back to routine, and back to faster pace mornings after the laid back vibe of summer. For some, this can mean rushing around and skipping breakfast – which is never fun. Breakfast provides energy, helps balance our blood sugar, and gives protein and fat for optimal brain function. An easy way to stay on time and get a healthy breakfast is overnight oats. These delicious bowls are well balanced and prepped the night before leaving more time for sleep or getting ready in the morning.
Overnight oats are perfect on days with early wake up calls, longer commutes, or hectic days that call for sustained energy. Mix everything the night before, store it in the fridge and grab and go in the morning. It doesn’t get easier! If you want to get fancy you can add a few toppings before running out the door. This easy breakfast can also be made in mason jars for easy transport and packing. What more could you ask for.
This version combines one of my favourite ingredients (peanut butter) with some of my favourite flavour boosters and reminds me of childhood. Everyone remembers eating a peanut butter sandwich at some point in their life – and these overnight oats will take you back to that time. Creamy peanut butter mixed with a hint of cinnamon and vanilla to make it a little more grown up and a touch of sweetness from maple syrup – peanut butter overnight oats are the hip adult version of PB sandwiches.
- 1 cup rolled oats
- 1/2 cup almond milk
- 1/2 cup coconut yogurt
- 1/2 cup natural peanut butter
- 2 tsp vanilla
- 2 Tbsp maple syrup
- 1/2 tsp cinnamon
- Place everything in a mason jar or sealable container and mix until well combined.
- Place in the fridge overnight
- Drizzle with additional peanut butter or top with diced apples and granola
