This tangy and herby cashew dip pairs perfectly with any crisp vegetable and is loaded with good fats and protein to help keep your energy up. Plate it alongside fresh cucumbers, carrots, cauliflower, snap peas, radish and celery on a show stopping plater for a beautiful snack or appetizer. Bring this to your next pot luck BBQ and you’ll look like a hero.

Creamy Veggie Dip
Ingredients
- 1 cup cashews, soaked
- 3 Tbsp lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 2 1/2 Tbsp onion powder
- 1/2 tsp paprika
- 1 tsp garlic powder
- 1/3 cup parsley, fresh
- 1 tsp Italian herb blend
- 1/4 cup + 1 Tbsp olive oil
- 1/4 cup water
- 1 Tbsp maple syrup
- 1 Tbsp apple cider vinegar
- 2 tsp sriracha
Instructions
- Soak cashews in the fridge overnight.
- Add everything to the base of your food processor and blend until creamy.
- Serve in a small bowl surrounded by your favourite veggies.
