The sandwich is a stable when it comes to school lunches, picnics and even tea parties and family reunions. There always seems to be some form of sandwich on the table (or blanket 🙂 ). Everything from the humble cucumber sandwich to the crowd pleasing sub. You can’t go wrong with a sandwich!
I don’t know about you but I LOVE a good chicken sandwich! The tang of the pickles mixed with the crunch of onion and juicy tomatoes …. It’s the perfect flavour combination! But sometimes I’m in the mood for something a little lighter with all the same flavours. That’s were this chickpea “chicken” sandwich comes into the picture. The perfect vegan version of a classic!
Chickpea “chicken” Sandwich

Ingredients
- 1 (19 oz) can of chickpeas
- 1 1/2 tbsp vegan mayo
- juice of 1/2 lemon
- salt and peper to taste
- splash of hot sauce
- 1/4 red onion, diced
- 1 pickle, diced
- 1 tbsp chopped parsley
Instructions
- Drain and rinse the chickpeas. Pulse in a food processor until chickpeas resemble chopped chicken. You do not want to puree them.
- Add the remaining ingredients and stir to combine.
- Serve on your favourite bread or wrap with lettuce, sliced cucumber and tomatoes.
