Celebratory Carrot Cake 


This weekend my family has many reasons to celebrate: my little sister graduated from her masters program, we have a family birthday and it’s Father’s Day. Talk about one heck of an exciting and joyful week. Any time my family celebrates there is always a cake involved. I’m not sure about you but for us the party is not complete unless there is an icing topped dessert involved.


This carrot cake fits the bill. It’s loaded with flavour and topped with a delicious vegan cream “cheese” icing. I made it for a previous family gather and it had everyone fooled. It very quickly became a family favourite.


If you’re looking for a light recipe that feels and tastes decedent than this carrot cake is for you. Gluten-free, vegan and loaded with carrots but with all the richness and indulgence that you look for in a dessert.

Carrot cake

Ingredients:

1 1/2 cup almond milk

2 tbsp vinegar

1 chia egg (1 tbsp chia and 3 tbsp water)

1 cup coconut sugar (or brown sugar)

1/2 cup coconut oil

1 tsp vanilla

1 1/4 cup gluten free all purpose flour mix

1/2 cup coconut flour

1/2 tsp salt

1 1/2 tsp baking powder

1/2 tsp baking soda

2 tsp cinnamon

1/2 tsp allspice

2 cups carrots

Directions:

Preheat oven to 350 degrees.

In a measuring cup combine almond milk and vinegar. Let stand for 5 minutes.

In a small bowl make your chia egg by whisking together the chia seeds and water. Let stand for 5 minutes.

In a large mixing bowl cream together the sugar and coconut oil.  Add the chia egg and milk mixture, and vanilla. Whisk to combine.

Sift in the flour, salt, baking powder, baking soda, salt, cinnamon and allspice. Stir to lightly combine and then add in grated carrots. Mix to fully combine.

Divide batter into 2 cake pans and bake for about 40 minutes or until a tooth pick comes out clean.

Let cake cool in pans for 30 minutes and then finish cooling on a wire rack. Once completely cooled top each layer with the icing and stack one cake on the other.

Icing

1/2 cup vegan butter

1 tsp vanilla

1 tsp apple cider vinegar

1 tsp lemon juice

2 cups icing sugar

Cream everything together with an electric beater until thick and creamy.
