I can’t believe it’s taken me this long to make black bean brownies! They are delicious!
Black beans are a great source of protein and fiber and are the perfect ingredient to use when making flour free desserts – like brownies. The combination of beans and eggs help give the brownies structure and a delicious fudgy texture. They are heaven!
These grain free brownies would make a delicious addition to any Mother’s Day brunch or empending summer party. No one will suspect they are made with beans (sshhh)!
Recipe:
1 (15oz) can of black beans
1/4 cup coconut oil
1/2 cup cocoa
1 egg
1/4 cup maple syrup
1/2 cup almond flour
2 tsp vanilla
1/2 tsp baking powder
1/4 tsp salt
1/3 cup coconut sugar
1/3 cup chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Add all ingredients except the chocolate chips to the bowl of a food processor and pulse on high until everything is combined and smooth.
- Transfer the batter to a greased and parchment lined brownie pan and sprinkle with the chocolate chips.
- Bake for 25-30 minutes, or until the brownie sets and no longer jiggles.
- Let cool completely and enjoy!
