That makes me a little sad since its my favourite season, but I am going to make the most of it.
Since Monday is Thanksgiving and the air has become crisp, I thought a nice warm harvest meal was just what the doctor ordered. Something to sooth the soul and celebrate some of the flavours and produce of fall. And when I think of fall my mind immediately pictures squash and pumpkins. Lucky for us they can be turned into almost anything, savoury, sweet – you name it, you can probably find a way to put squash in it.This week we are going to keep things a little more classic and make a simple but delicious stuffed acorn squash dish. The perfect addition to any Thanksgiving table. A harmonious marriage of savory and sweet that everyone will love. This recipe is the perfect week night meal, ready in under an hour or a great addition to your thanksgiving menu. If you want to make this recipe vegan or vegetarian simply eliminate the ground chicken and add more quinoa and cauliflower.
