School is almost back in session, which means life is about to get a lot busier. Waking up early, rushing to after school programs and homework keep every family on their toes. These are the days and moments where we can use a quick and easy energy boost. One that doesn’t blow our diet or pump us up with tons of sugar. We need something with protein, fiber and a touch of sweetness. Something the kids can help to make and doesn’t take hours upon hours. Lets be honest, Kids attention spans aren’t very long and busy parents (business people) don’t have tons of spare time.
When I’m busy it’s easy to forget to eat. Then my energy crashes, headaches set in, and my productivity completely plummets. This is when the sugar cravings start and the little voice in my head tempts my will power. Having healthy, energy supporting snacks in the fridge/freezer is the perfect way to satisfy those craving without sabotaging your healthy diet. You satisfy your hunger, get the carbs your brain needs to function and replenish your energy so you’re ready to tackle the second half of your day.
These mocha energy bites are the perfect snack for that 3pm crash. Packed full of protein, healthy fats and fiber they support your energy systems without causing that horrible sugar spike. Not to mention they are completely addictive and super easy to make. Even the most amateur chef can turn out these delicious morsels.
- 12 medjool dates
- 3/4 cup rolled oats
- 3 Tbsp hemp seeds
- 1 1/2 Tbsp instant coffee
- 4 Tbsp cocoa powder
- 1/2 cup pecans
- 1 Tbsp vanilla
- 2 Tbsp coconut oil
- 3 Tbsp maple syrup
- Combine all ingredients in a food processor and pulse until everything comes together to form a sticky dough.
- Roll into 1 inch balls and place in an airtight container.
- Store in the freezer.
