School is almost back in session, which means life is about to get a lot busier. Waking up early, rushing to after school programs and homework keep every family on their toes. These mocha energy bites are the perfect snack for that 3pm crash. Packed full of protein, healthy fats and fiber they support your energy systems without causing that horrible sugar spike. Not to mention they are completely addictive and super easy to make. Even the most amateur chef can turn out these delicious morsels.
- 12 medjool dates
- 3/4 cup rolled oats
- 3 Tbsp hemp seeds
- 1 1/2 Tbsp instant coffee
- 4 Tbsp cocoa powder
- 1/2 cup pecans
- 1 Tbsp vanilla
- 2 Tbsp coconut oil
- 3 Tbsp maple syrup
- Combine all ingredients in a food processor and pulse until everything comes together to form a sticky dough.
- Roll into 1 inch balls and place in an airtight container.
- Store in the freezer.
