This past weekend was a beautiful one. Between spending time outside, work, family time and PanAm games watching the weekend flew by. Laid back weekends are amongst my favourite. No rush, no planning, just laid back fun and relaxation. Take each day one hour at a time!
Laid back weekends are also a great time to get some meal prep done. Set aside 2 hours in the morning to set up your work week for meal success. Remember if you don’t plan to succeed, you plan to fail! The same things goes for our nutrition and eating habits. When you don’t plan ahead and take some time to stock your kitchen and prep meals, you make poor food choices, reaching for the fast foods, processed snacks or even skip meals all together. Take the time in the morning and set your self up for success!
Some of the easiest prep work includes chopping veggies, batch cooking chicken, or making grab and go snacks. 2 hours on the weekend will save you an extraordinary amount of time during the week, and you’ll make healthy choices because food is already prepped and requires zero effort! It’s a life changing thing.
Date balls are the perfect make ahead snack. They require very little effort and can be stores in the fridge or freezer for weeks!
Chocolate Date Balls
Ingredients:
10 medjool dates, chopped
2 tbsp coconut oil
2 tsp vanilla extract
2 tbsp cocoa powder
1 chia egg (combine 1 tbsp ground chia with 3 tbsp water)
2 1/4 cups rolled oats
3 tbsp pure maple syrup
Directions:
- Add everything to a food processor and pulse until combined and a slightly sticky dough forms.
- Roll into 1 inch balls and store in an air tight container in the fridge
- Enjoy
