I love going for adventures in the country. Whether it’s a long drive down tree lined, winding roads or a hike through the woods. One things remains the same no matter what the adventure. I always get hungry and search for a delicious treat. To avoid gravitating towards unhealthy, sugar filled store bought snacks always pack a goodie bag.
The perfect goodie bag for me always includes fruit, some type of beverage, and something a little sweet (maybe slightly indulgent), and some type of protein. Snack bars, seed clusters, raw oatmeal cookies or energy balls are all great options for that sweet, crunchy, protein component. I love to create easy snack recipes that are perfect for travel or those days that are a little rushed, you know what I’m talking about!
These sunflower oatmeal bites are the perfect snack. They have all the components of a great snack. A little sweet, nutty, portable and protein packed.
Ingredients:
2 cups rolled oats
1 cup almond meal
1/4 cup hemp seeds
1 tsp cinnamon
2 tsp vanilla
1/4 cup sunflower seed butter
2 tbsp coconut oil
1 cup medjool dates
2 tbsp honey or maple syrup
Directions:
- Chop dates and add to food processor with all other ingredients.
- Pulse until everything is combined and forms a slightly sticky dough.
- Roll into 1″ balls and store in the fridge in an airtight container
